Pumpkin Bread (makes one loaf)

I wanted to share another pumpkin bread recipe. It may be springtime, however pumpkin flavor need not be relegated to one season of the year. This pumpkin bread recipe comes from one of my favorite baking websites: Joy of Baking. Joy of Baking features recipes for some of my favorite desserts like quick breads, brownies, and cookies. I hope you enjoy this recipe.
Pumpkin Bread
(makes one 9x5 loaf)

1.5C all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground allspice
1/2 tsp salt
1/2C unsalted butter, room temperature
1C granulated white sugar
2 large eggs, room temperature
1 tsp vanilla
3/4C (175g) canned pumpkin purée
1. Preheat oven to 350. Spray a 9x5 loaf pan with cooking spray and line with parchment paper.
2. In a medium bowl, sift together the flour, baking soda, cinnamon, ginger, allspice, and salt.
3. In a stand mixer, beat butter and sugar for 2-3 minutes until light and fluffy. Add eggs, one at a time, until just incorporated. Beat in vanilla extract.
4. Scrape down sides of the mixing bowl if needed.
5. Add flour mixture and pumpkin purée. Beat until just mixed in.
6. Scrape batter into lined loaf pan. Bake 45-60 minutes until a toothpick inserted into loaf comes out clean.
7. Cool for at least 1 hour. Slice, serve, and enjoy.
