Sour Cream Coffee Cake

I am going to cut straight to the chase. This is the fluffiest coffee cake I’ve ever had. Enjoy it with a cup of coffee or tea and savor it with the friends and family you love.

Coffee Cake

Cake batter
1/2 C (1 stick) butter
1 C granulated sugar
2 eggs
1 t vanilla
2 C all-purpose flour
1 t baking powder
1 t baking soda
1/2 t kosher salt
1.5 C sour cream

Cinnamon Sugar Topping
1/3 C brown sugar
1/3 C grantulated sugar
1.5 t ground cinnamon
1 C walnuts, toasted and chopped (optional)

Directions
1. To begin the cake, preheat oven to 350
2. Grease a 9x13 inch baking pan.
3. In a stand mixer, cream butter and grantulated sugar on medium-high speed until light and fluffy (about 2 minutes)
4. Add vanilla and first egg. Mix on medium-low speed until just incorporated.
5. Add second egg and mix until just incorporated.
6. In a separate medium bowl, sift together the flour, baking powder, baking soda, and salt
7. On medium-low speed, incorporate 1/2 of the flour mixture into the butter mixture. Then, incorporate 1/2 of the sour cream. Next, incorporate the rest of the flour mixture. Once the flour mixture is completely incorporated, mix in the remaining sour cream. Scrape down the bowl of the stand mixer as necessary
8.In a small bowl, make the cinnamon sugar topping by whisking together the sugars, cinnamon and nuts.
9.To assemble the cake, spread 1/2 the cake batter evenly across the greased pan.
10. Top the batter with 1/2 of the cinnamon sugar mixture.
11.Spread the remaining cake batter in the pan and top with the remaining cinnamon sugar mixture:
12. Bake cake at 350 for 20-30 minutes until a toothpick inserted into the cake comes out clean.
13. Cool for at least 1 hour, slice, and serve!

#TedoneTips
1. The cake batter will be sticky. Use an offset spatula to spread the batter across the length of the pan.
2. The original recipe called for baking the cake for about 30 minutes. My cake cooked much quicker. I suggest checking for doneness around 20-22 minutes.
3. Before starting, make sure your butter and eggs are at room temperature. This will allow them to mix correctly with the other ingredients. If either the butter or eggs are too cold the final batter may not be homogenous. This can ruin the final product.
