Cake4Kids Spring Fling Bake Off Recap (Plus Recipe)

Last month I participated in the Cake4Kids Spring Fling Bake Off and Auction. The public could bid on a variety of cakes, cupcakes, ands cookies baked by volunteer bakers. The best baked good in each category, determined by the judges, won a prize. I had a great time participating and wanted to share more about my experience.

I was excited to participate in a Bake Off where members of the public could try my baked good. I wanted to go with a cake that was simple to make, yet still flavorful. I wanted my design to evoke spring, but be something I could execute. I settled on baking a Hummingbird Cake with Cream Cheese Frosting, decorated in a pretty in pink striped pattern, and topped with a fondant peony.

I used this recipe for both the Hummingbird Cake and Cream Cheese Frosting. The cake was moist with a rich. banana flavor that was complemented by the additions of cinnamon and vanilla. The Cream Cheese Frosting had a slight tang that was tamed by the butter and sugar.

My design aesthetic came to life via a pretty in pink striped pattern. I used my Wilton Cake Comb set to smooth the Cream Cheese Frosting into a striped pattern. I used a leaf tip to pipe leaves on top of the cakes. I made a perfect for springtime Peony out of pastel pink fondant. Let me tell you, that peony epitomized everything I love about the springtime.

I’m happy to report my. Harmonious Hummingbird Cake sold for $75 which was more than I ever imagined. I was truly in awe watching the bids climb for the cake. All winning bids raised funds for Cake4Kids and I was honored to have contributed.

I hope Cake4Kids hosts another auction like this. I had an amazing time participating and would love to participate in another auction in the fall or winter. Plus, this Hummingbird Cake with Cream Cheese Frosting can’t be beat. It would be perfect for any spring or summer table. The cake only requires 2 bowls and the frosting is made in the mixer in minutes.

Cake4Kids is an organization that does good in the world by delivering custom celebration treats to youth who would otherwise not receive one.
