Hearty Lentil Soup
As the warm summer days turn into crisp fall weather I am ready for all things soup. I decided to make the Well Plated Instant Pot Lentil Soup! It came out hearty and flavorful. Let me share with you what I loved so much about it!
Lentils- Lentils are a hearty plant based protein full of vitamins and fiber. They can help lower cholesterol, reduce risk of heart disease, improve digestive health, and stabilize blood sugars. Incorporating lentils into soup is an easy way to add this nutrition powerhouse to your diet.
Instant Pot- I love my Instant Pot! There are so many Instant Pot recipe resources out there including cookbooks and websites such as Well Plated. I used Goya lentils, cooked at high pressure for 10 minutes, did a 10 minute natural release, and then did a quick release.
Customizable- I customized this recipe a bit to fit my tastes and what I had! I left out celery and added a bit more carrot! I included cumin in my spices. Also, I added about 1 TBSP tomato paste as I cooked the garlic! Additionally, I added about 1 extra cup of broth as I like my lentil soup a little thinned out ( though it naturally stays pretty thick!). The final product had a rich, tomato based, hearty depth of flavor!
This Lentil soup hit the spot for a comforting Monday lunch. It will certainly be in my rotation throughout the fall as the temperature dips and I look to stay warm! I hope you consider making this hearty soup. If you do, please let me know how you like it!
