Hello and happy almost first day of fall! It is wild to me that summer days are dwindling and crisp fall weather is soon upon us ( I feel like I am already experiencing this crisp weather on my morning walks).

I’ve had some really great end of summer bakes that I can’t wait to share with you. Plus, the best part is these bakes aren’t just reserved for summer so I’d recommend adding them to your fall baking list.

Fudge Brownie Pie: This fudge brownie pie had me shook and pleasantly surprised. I felt it was fun, unique, and EASY peasy as can be. I followed this Fudge Brownie Pie recipe and swapped the standard pie dough recipe for the graham cracker crust. You can add a marshmallow or meringue topping but the filling is SO rich I really think anything more then a dusting of powdered sugar, scoop of vanilla ice cream, or bit of whipped cream isn’t super necessary. While this pie tastes delish at room temperature, I like it straight out of the fridge and warmed up for about 10 seconds in the microwave. This allows the chocolate filling to still be kind of hard but also have the chill slightly taken off. Bake time for me was closer to 35ish minutes (internal temp of this pie filling should be about 180-190 degrees for the perfect balance of fudgey and not too cake-like. Plus, no mixer required (!!!)

Raspberry Shortbread Crumb Bars : I made these Raspberry Shortbread Crumb Bars for Labor Day and they were a hit. The base and the topping are made from the same dough (yay for versatility) and you can use whichever jam you’d like. I used raspberry preserves, but for the fall, want to try using an apple butter (for full fall-ness!). The bars are on the thinner side which I like because everyone can have a taste without feeling like they are too hearty. In the future, I’d like to try playing around with the dough:filling ratio and possibly 1.5 or 2x everything and see how she goes!
