Lemony Lentil Soup

I hope everyone enjoyed my previous post that featured a recipe, and the history, of soda bread. This is a great bread to make if you are looking to bake bread for the first time. Soda bread tastes great on its own, smeared with butter, or toasted. Its' dense crumb also makes it a perfect bread for dunking into soups and stews. Consider dunking it into this lemony lentil soup for that perfect combination of soothing soup and crusty bread. Nothing beats it.

Lemony Lentil Soup

Ingredients
1T olive oil
1 medium white or yellow onion, diced
2 carrots, peeled and diced
5 cloves of garlic, minced
4 C low sodium chicken or vegetable stock
2 C water
1.5 C red lentils, rinsed and picked over
2/3 C canned corn
1 T cumin
2 t curry powder
1 t ground tumeric
1 lemon (zested and juiced) 
1 t salt
1/4 t pepper

Directions
1. In a medium sized dutch oven, heat olive oil over medium heat.
2, Add carrot and onion and cook until softened (about 8 minutes)
3. Add cumin, curry powder, and tumeric and saute until fragrant (1-2 minutes)
4. Add garlic and saute until fragrant (another 1-2 minutes)
5. Add corn, stock, and water. Bring to a boil. Once at a boil, bring down to a simmer.
6. Add lentils, salt, and pepper.
7. Simmer until lentils are cooked and softened ( usually 20-40 minutes)
8. Once lentils are cooked, use immersion blender to puree soup to desired consistency. Alternatively, puree soup in blender and return to pot.
9.Once soup is pureed, stir in lemon zest and juice, Serve!

1. When reading the ingredient list: C=cup, T=tablespoon, t=teaspoon
2. Don't have or want to buy tumeric? No problem, just increase curry powder from 2 teaspoons to 3 teaspoons
3. Cook cumin, curry powder, and tumeric with the vegetables. This enhances the flavor of the spices.
4. Look at your bag of lentils. There should be directions that guide you to how long it takes for the lentils to be fully cooked.
5. If you are pureeing the soup in a blender, remove the plastic piece of the cover. Cover this spot with a clean dish towel. This allows steam to escape as you puree!
6. Finally, if pureeing in  a blender, only fill the blender half-way as you puree. If you fill it up too high with hot liquid, the liquid may explode out of  the blender.
