Two Muffin Recipes I'm Loving! + a cookbook recommendation

Hello friends and Happy 2023,
I hope everyone’s year is off to a great start and you’ve gotten lots of baking time in. If you haven’t, fear not! I’m here with 2 muffin recipes I’ve been loving! Here are a few reasons why I love baking muffins!


1. No Stand Mixer Required! Mix wet ingredients in one bowl. Mix dry ingredients in a second bowl. Gently fold wet ingredients into dry ingredients. Scoop batter into lined muffin tins and bake! Easy and efficient-exactly what we need in 2023.


2. Small servings- I don’t know about you, but sometimes I bake and decorate an entire layer cake from scratch and then think- who is going to eat all of this? But muffins… everyone loves a muffin. Enjoy one yourself for breakfast and then maybe another as a mid-day snack and then maybe another as a nighttime snack with some tea (speaking from personal experience? perhaps!) and then maybe offer some to friends and family-they won’t say no


3. Freezer friendly- if they last that long!

Two Muffin Recipes I Love

1. Coffee Cake Muffins
Coffee Cake Muffins:
I love this Baker Bettie recipe for Coffee Cake Muffins. She has a very similar recipe in her Baker Bettie’s Better Baking Book (click link to order from my local bookstore :)) You can follow the recipe as is and can get about 14 muffins.
a. Alternatively, you can follow the recipe I followed in the book which involved leaving out the chocolate chips and pecans and replacing the buttermilk with whole milk. I also swirled some of the streusel into the batter (you will have extra!). Also, sometimes I’ll drop the oven temp to 350 after the first 10 minutes if the batter is getting too dark. Following my lead (leaving out some of the mix-ins) will yield about 10 muffins!

I love the Baker Bettie’s Better Baking Book and feel it is a great cookbook for experienced bakers and new baker’s alike. The first half of the book focuses on baking science and education, and the second half is focused on recipes. There are master recipes allowing you to customize sweet and savory quick breads, blondies & bars, cakes, pies, and more. This baking book is a beneficial resource if interested in baking a variety of desserts (plus it is very approachable). Let me know if you check it out! I’m obsessed with the soft sandwich bread recipe (and have made it 5+ times).

2. Chocolate Chip Muffins

The Baker Bettie website has a master recipe if you want to make chocolate chip muffins, but I love this recipe for chocolate chip muffins fom Little Sweet Baker. I mix 2tsp of cornstarch into the dry ingredients (this is not called for in the original recipe) and it makes them SO fluffy. To be honest, I thought this was called for in the original recipe, but it is not. So I do not know why I originally did- but it is clearly the right choice.
